Recipe Ingredients for Sizzling Seitan or Tofu Fajitas

12 oz tofu
1 T lemon juice, fresh
2 T olive oil
1/2 t salt
1 bell pepper, cut into strips
1 red pepper, cut into strips
12 flour tortillas, 8"
1 tomato, diced
2 c lettuce, shredded
1 c salsa
1 c sour cream
1 c Cheddar cheese, shredded

Recipe Directions for Sizzling Seitan or Tofu Fajitas

  1. Preheat broiler. Line a baking sheet w/foil and lightly oil.

  2. Cut the seitan into narrow strips, about 2" in length. In a mixing bowl, gently toss w/ the lemon juice, olive oil, and salt.

  3. Arrange the setan and the bell peppers in the pan. Broil about 6-8" from heat source for 5-8 minutes, until golden. Carefully stir and broil another 5-8 minutes, until mixture is lightly browned.

  4. Meanwhile, stack the tortillas and wrap in foil. Warm in the oven for 5 minutes.

  5. Place the garnishes in seperate serving bowls. Place the seitan and peppers in a serving platter.

  6. Distribute 2 warmed flour tortillas to each person. To assemble a fajita, place a few strips of the seitan and peppers in the center of a tortilla and garnish as you wish Roll up and eat out of hand.
