these are a great non-fried lower cal sub for coconut shrimp, or crab cakes.

Recipe Ingredients for Sizzling Coconut Shrimp Cakes

1/2 lb shrimp
0.33 cups breadcrumbs
1 tablespoon ginger
1/4 cup fat free mayonaise
1/4 cup carrot
1/4 cup red pepper
1/4 cup green onion
1 tablespoon lemon juice
1 egg
2 teaspoons rice vinegar
2 teaspoon garlic
1/4 teaspoon red pepper
1 cup coconut
1 cooking spray
1/2 cup sweet chili sauce

Recipe Directions for Sizzling Coconut Shrimp Cakes

  1. preheat oven to 375. place coconut on microwave safe dish in thin layer. mircowave 3-4 minutes stirring after each 20 seconds until toasted. set aside to cool.

  2. finely chop shrimp. thinly slice green onions, peppers and carrots. Combine shrimp, cinger, lemon juice, green onions, carrots, pepper, mayo, egg, pressed garlic and vinegar in a bowl mix well. combine bread crumbs and red pepper. combine the two mixtures and mix well. sprinkle half the coconut on a cutting board. using a 2 ounce scoop, scoop mixture onto coconut, sprinkle with other half of coconut. Press down slightly on mounds to create patties, transfer to parchment lined baking sheet and bake for 18-20 minutes until coconut is golden brown. Serve with sweet chili sauce.
