From the Flat Belly Diet recipe list. GOOD! The recipe calls for heirloom tomatoes and oil-packed sun-dried tomatoes, but I didn't have either and didn't notice a difference!

Recipe Ingredients for Sizzled Shrimp w/ Tomatoes

2 tsp olive oil
1 lb medium shrimp
2 tablespoons sun-dried tomatoes, chopped
1/2 red onion
1 cup corn kernels, canned
4 roma tomatoes, diced
4 cloves garlic
1/4 tsp sea salt
1/4 tsp pepper
1 tablespoon basil
1 tablespoon chives
1 cup avocado, sliced

Recipe Directions for Sizzled Shrimp w/ Tomatoes

  1. heat 1 tsp oil in nonstick skillet over medium-high. When hot, add shrimp and sizzle for 1 minute or until partially cooked. Transfer to a bowl.

  2. Add remaining oil along with sun-dried tomatoes, onion, and corn. Cook 6 minutes, or until onion and corn are browned. Stir in tomatoes and garlic. Cook for 3 minutes. Stir in shrimp and simmer fo 1-2 minutes or until shrimp are opaque.

  3. Season with salt and pepper and stir in basil and chives. Serve, garnished with avocado over 1/2 cup brown rice or with a multigrain pita on the side.
