Recipe was modified by reducing sugar, using some whole wheat flour and slightly lowereing fat content.

Recipe Ingredients for Six Week Bran Muffin Mix ( Modified Recipe )

2 cups sugar
4 cups all-purpose flour
1 cup whole wheat flour
9 cups raisin bran cereal
1 cup egg substitute or 4 large eggs, beaten
2 teaspoons salt
2 teaspoons baking soda
1 cup vegetable oil
1 quart buttermilk

Recipe Directions for Six Week Bran Muffin Mix ( Modified Recipe )

  1. If the vinegar and milk mixture is to be used, prepare it first and set aside. Measure flour into a 1 gallon size mixing bowl. Add salt, soda, and sugar to the flour and mix well, or sift together. Stir in raisin bran and continue mixing. With a spoon, make a well in the center of the dry ingredients. Beat eggs with a fork only until the whites and yolk are evenly blended. Combine eggs, milk, and oil. Beat well with a fork. Add liquid mixture to dry ingredients and stir with a long handle spoon only until dry ingredients are moistened ( mixture will be lumpy) .

  2. Store in the refrigerator in a tightly covered container until needed for up to six weeks.

  3. Heat oven to 425 degrees F. Greases only the bottom of the cups in the muffin pan. Fill the muffin cups to 3/4 full. ( The muffin cups may have the batter added the night before, covered with wax paper or plastic wrap and left in the refrigerator until the next morning. ) Bake at 425 degrees F for approximately 15 to 20 minutes or until golden brown.
