For the meat eater in my family...me. Veggie version omits the meat.

Recipe Ingredients for Sirloin tips

1 pound lean beef
1 tablespoon whole wheat flour
1 1/2 tablespoons olive oil
2 small russet potatoes
1 1/2 carrots
1/4 yellow onion
1/4 teaspoon pepper
1/4 teaspoon salt

Recipe Directions for Sirloin tips

  1. Preheat oven to 325 F.

  2. Cube vegetables into large chunks, place on non-stick cookie sheet with sides (jelly roll pans are perfect) and drizzle with half the olive oil.

  3. Cube meat in large chunks, put into covered clay pot with rest of olive oil, salt, pepper and whole wheat flour. Stir slightly so that olive oil and flour are somewhat mixed together.

  4. Put meat and vegetables in oven (vegetables under clay pot) and roast at 325 F for about 2 hours.

  5. Stir vegetables and meat about once every half hour.

  6. Mix together and serve - I serve over steamed rice.
