Stir-fry rice vermicelli with bell peppers, ham, and crab meat

Recipe Ingredients for Singapore rice vermicelli

6 1/2 oz rice vermicelli
1/2 cup organic chicken broth
1 red bell pepper
1 green bell pepper
4 cloves garlic
1 carrot
4 oz ham
4 oz imitation crab meat
1 tblsp olive oil
2 tblsp soy sauce
1 tblsp curry powder
2 eggs

Recipe Directions for Singapore rice vermicelli

  1. Soak dry vermicelli in boiling water 4 minutes, drain.

  2. Scramble egg in pan, remove egg to bowl.

  3. Saute garlic and curry powder in oil.

  4. Add chopped pepper and carrot, saute briefly.

  5. Add chicken broth and bring to a boil.

  6. Add ham, crabmeat and drained vermicelli; cook until most liquid absorbed.

  7. Add soy sauce and scrambled eggs.

  8. Optional: add hot sauce.
