Rice noodles with curry and sauteed shrimp

Recipe Ingredients for Singapore Noodles

4 oz Vermicelli Rice Noodles
3 tbsp Soy Sauce
12 oz Shrimp, Mixed Species
0.75 cup, chopped Onions
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
0.5 cup Organic Chicken Broth
2 tbsp Mirin (rice cooking wine)
1.764 oz Cilantro
2 tbsp Curry Powder

Recipe Directions for Singapore Noodles

  1. Cook rice noodles according to instructions, rinse and set aside

  2. Peel shrimp and toss with 1/4 teaspoon sugar and 1/2 tsp curry powder

  3. Add oil to pan and heat over med/high

  4. Add shrimp and cook until pink and firm

  5. Remove shrimp, cover and reserve

  6. Add onions and peppers to pan and cook until done

  7. Add curry powder and cook for 1-2 minutes

  8. Add rice noodles to pan, pulling to separate

  9. Add soy, broth and mirin and shrimp

  10. Cook all until sauce is thickened and noodles and shrimp are warmed

  11. Stir in cilantro mix well and serve.
