Low in cals and most likely spectacular! Feel free to change it up with veggies and meats! You could also substitute chik'n meatless strips! Fabulous!

Recipe Ingredients for Singapore Mai Fun... Inspired by Cooking Light's Singapore Mai Fun

1 cup almond milk unsweetened (calories same as 1 package shirataki noodles)
1/2 cup fat-free, less-sodium chicken broth
3 tablespoons low-sodium soy sauce
1 teaspoon sugar
1/2 teaspoon salt
2 teaspoons peanut oil, divided
1/4 cup egg beaters, lightly beaten
1/2 cup bell pepper (red strips)
1 tablespoon fresh ginger (grated and peeled)
1/4 teaspoon crushed red pepper
3 garlic cloves, minced
8 ounces skinless, boneless chicken breast, thinly sliced
1 tablespoon curry powder
8 ounces medium shrimp, peeled and deveined
1 cup green onions (sliced)

Recipe Directions for Singapore Mai Fun... Inspired by Cooking Light's Singapore Mai Fun

  1. Cook Shirataki Noodles according to package directions, RINSE AND DRY THOROUGHLY!!!!!!

  2. Combine broth, soy sauce, sugar, and salt; stir until sugar dissolves.

  3. Heat a large nonstick skillet over medium-high heat (for best results, use a wok!)

  4. Coat pan with cooking spray.

  5. Add 1 teaspoon oil.

  6. Add egg beaters.

  7. Stir-fry 30 seconds or until soft-scrambled, stirring constantly. Remove from pan.

  8. Wipe pan clean with a paper towel.

  9. Heat the remaining teaspoon oil in pan over medium-high heat. Add bell pepper strips, ginger, crushed red pepper, and garlic; Stir-fry 15 seconds.

  10. Add chicken, and stir-fry 2 minutes.

  11. Add curry and shrimp; stir-fry 2 minutes.

  12. Stir in noodles, broth mixture, and egg; cook 1 minute or until thoroughly heated.

  13. Sprinkle with green onions.

  14. FOR ENTERTAINING and the most fun :) , serve in mini Chinese Take-Out Containers!! And most importantly, enjoy!!!!
