Delicious meal Mom used to make for us. Garnish with chopped tomatoes.

Recipe Ingredients for Simply Lentils

3/4 cup lentils
3 cups chicken broth or water
1/2 teaspoon salt
1/4 teaspoon ground ginger
1 tablespoon soy sauce
1/4 cup chopped onion
1 clove garlic, minced
6 tablespoons sour cream (1 Tblsp serving each)
3 cups brown rice (1/2 cup serving each)

Recipe Directions for Simply Lentils

  1. Boil water. Add lentils and cook at a low boil for 25 minutes.

  2. Add salt, ginger, soy sauce, onion, and garlic and cook about 15 more minutes or until lentils are tender.

  3. Serve over brown rice. Season with extra soy sauce if desired, and garnish with a dollop of sour cream and chopped tomatoes.
