Just a really simple eggs florentine recipe i made up. Keeps the cals low and the protein up! If you want to cut even more cal, substitute a low fat or nonfat cheese!

Recipe Ingredients for Simpletons Eggs Florentine

3 large Egg, Whole
2 tbsp chopped Onions
1 pepper Peppers, Jalapeno
5 grams Garlic
2 ea Mushrooms
0.5 grams Pepper, Black
40 grams Medium Cheddar Cheese

Recipe Directions for Simpletons Eggs Florentine

  1. Chop your garlic, jalapeno, onion, and mushrooms to your liking, and place in bowl. Add your eggs, and beat until smooth, then set aside.

  2. In a non stick skillet, saute your spinach over med-hi heat until wilted (i like mine soggy). Place on the dish the meal will be served on, and return the skillet.

  3. Pour your egg mix into the skillet, and scramble to your liking. When ready, remove from heat, and place the cooked egg mix onto the bed of spinach. Garnish with cheese now (if you didnt add it into your mix before scrambling). Pepper to taste, and enjoy!
