Recipe Ingredients for Simple and Yummy Potato Salad

1 1/2 lb boiled potato in skins, chopped nugget potatoes work best
5 hard boiled eggs, chopped
1/3 cup chopped green onion
1/4 cup chopped green pepper
1/4 cup olive oil
1/4 cup lemon juice
1 tbsp fresh dill
1/2 tsp kosher salt
1/4 tsp Pepper, Black

Recipe Directions for Simple and Yummy Potato Salad

  1. Chop cooked potatoes, eggs and vegetables and dill and mix in large bowl.

  2. Mix olive oil, lemon juice, salt and pepper separately and then pour over other ingredients. Mix well. Drizzle more lemon juice, olive oil and/or seasonings to taste.
