Delicious whole wheat crepes. This recipe makes enough for a maximum of three people (6 crepes). Scale up to make for more. For a vegan version, omit the egg. Make sure to adjust the proportions of flour:water in order to get the proper thickness of the mix. The amount of salt you put in is also optional - I like my crepes quite salty so you may want to reduce the amount your first time. Serve with jams and sweet condiments, or with salty toppings, or mix and match. A favourite of mine is honey (or any kind of jam) with feta cheese. Yum!

Recipe Ingredients for Simple Whole Grain Crepes

1/2 cup all purpose flour
3 tbsp all purpose flour
1 1/2 tsp salt
1 medium egg
1 cup water
5 g butter
44 12 Grain Flour

Recipe Directions for Simple Whole Grain Crepes

  1. Turn on the stove top and turn to medium heat. Place a shallow skillet on the stove top to heat while you prepare the crepe mix.

  2. Mix the flours and salt in a deep bowl. I apologize for the entry on 12 grain flour, it's a custom food and I couldn't get it to display properly. It should read 44g or 1/3 cup.

  3. Crack the egg on top and add 1/2 cup water. With a fork or mixer, mix vigorously until the mixture is smooth (no lumps remain).

  4. Add the rest of the water and mix well. The mixture should be a thick liquid - if it feels watery, you need to add more flour. Do not add too much 12 grain flour or the crepes will tear easily.

  5. Take a dab of butter and place it on the heated pan. Take the pan and swirl the butter around as much as you can in order to cover most of the pan. Not every bit of the surface needs to be covered, but the butter needs to have made trails to all the sides.

  6. Using a measuring cup or ladle, spoon about 1/3 cup of the mix onto the pan and move the pan so that the mixture is spread evenly as far as it can reach.

  7. Wait until the top of the whole crepe has "dried" and the sides curl up. Using a wooden spatula, carefully flip the crepe and leave for another minute.

  8. Slide the crepe off the pan and repeat until no more mix is left.

  9. Serve warm or cold. To store, cover with plastic wrap and refrigerate for a maximum of 1-2 days.
