Nice side dish for Roasted Chicken with Lemon or any other meat prepared. I reduced the olive oil to cut calories.

Recipe Ingredients for Simple Vegetable Medley

1 1/2 cups broccoli
1 1/2 cups cauliflower
3/4 cup snow peas
1/2 cup carrot
1 red bell pepper
1/2 cup mushrooms, sliced
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1/4 cup scallions, chopped
1/4 teaspoon dried thyme

Recipe Directions for Simple Vegetable Medley

  1. Steam broccoli, cauliflower, peas and carrots in a vegetable steamer for 5-10 minutes or cook covered in a microwave with a little water until crisp tender.

  2. Transfer to a large serving bowl. Add bell pepper and mushrooms to bowl and toss to mix.

  3. In a small bowl, combine olive oil, scallions and thyme with a whisk. Drizzle over vegetables and serve.
