Recipe Ingredients for Simple Treats Lemon Cake

1/2 cup canola oil
1/2 cup maple syrup
1 cup soymilk
1/2 cup lemon juice
3 tbsp lemon peel
1 tsp vanilla
2 tsp lemon extract
1/2 cup sugar
4 cups barley flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt
1 tsp poppy seeds
1 tsp sugar

Recipe Directions for Simple Treats Lemon Cake

  1. Note: recipe calls for juice and zest of 2 lemons, saying it's about 1/2 cup of juice and 3 tablespoons zest (which CC calls peel)

  2. Preheat oven to 350.

  3. Mix wet ingredients including lemon zest in a medium bowl.

  4. Mix dry ingredients (except poppy seeds and additional sugar) in large bowl.

  5. Mix wet ingredients into dry.

  6. For cupcakes, fill 24 standard size cups. For cake, makes a 2-layer 8" or a 9x13". Sprinkle poppy seeds and sugar on top (1 tsp is a guess - the recipe just says to sprinkle).

  7. Bake cupcakes for 15 minutes. For cake, bake 30 minutes, rotate pan, and bake 20-25 more minutes until toothpick comes out clean. Cool for 15 minutes in the pan, then transfer to a wire rack.
