Quite tasty. My grandmother enjoys. Kind of a casserole but simpler. Could be made with skim milk and egg white for lower fat. Soy milk with no cheese to veganize... and different nuts or spices. I just used what I have on hand and was pleasantly surprised. The buttermilk gives it more of a complex flavour but definately a comfort dish.

Recipe Ingredients for Simple sweet potatoe

3 sweet potatos, medium, mashed
1 tsp margarine
1/2 cup buttermilk
1 egg
1/4 cup splenda
1/4 cup pine nuts
1 tbsp whole wheat flour
1/4 cup cheddar, low fat, grated

Recipe Directions for Simple sweet potatoe

  1. wash and peel sweet potatoes

  2. steam or boil them until tender

  3. mash with margarine and buttermilk

  4. whip egg in a seperate bowl and then mix in to potato mixture

  5. put in small glass baking dish

  6. combine sweetener to taste with pine nuts, flour and spices(I like cinnamon, nutmeg and ginger)

  7. sprinkle on top of potatoes

  8. bake at 350 degrees for 30 mins

  9. put grated cheese on top and let bake 5 minutes more
