Simple vegetable and rice soup. It is very nutritious and easy to make.

Recipe Ingredients for Simple and Spicy Vegetable and Brown Rice Soup

1.5 cup, chopped Onions, Spring Or Scallions
1.5 large whole (3" dia) Tomatoes, Red, Ripe
1 cucumber (8-1/4") Cucumber
1.5 cup, pieces or slices Mushrooms
2 cup, chopped Kale
0.5 cup, chopped Carrots
2.5 cup Vegetable Stock
8 oz 100% Vegetable Juice
9.157 oz Tomato Sauce
2 Glass Water
5 clove Garlic
6 tsp Cumin
3 tbsp Garlic Powder
4 tsp Spices Crushed Red Peppers
1 tablespoon Oregano
1 tbsp, ground Basil, Dried
0.5 cup, chopped Cabbage, Red
0.5 cup Rice, Brown, Medium-grain, Cooked

Recipe Directions for Simple and Spicy Vegetable and Brown Rice Soup

  1. Spray a large soup pot with a non-stick spray and turn stove to medium-low heat.

  2. Add in green onions and minced garlic. Saute for a few minutes

  3. Chop tomato and add it into the pot

  4. Add remaining vegetables into the pot, kale goes in last. You'll want everything cut into bite sizes but if you prefer a chunkier soup, that's fine too

  5. Once all the veggies are in, add the vegetable stock, v8, and tomato sauce

  6. Add seasonings to taste and add water as needed.

  7. Let the soup cook for about 2 hours, or until all the veggies are soft

  8. While the soup is cooking, cook the rice

  9. When the rice is done, just mix it into the soup

  10. Serve as a side or the main dish.
