This is the recipe for the Spanish rice my family likes. It has a good amount of veggies in it and a lot of flavor. The rice is a nice mild side dish that is good for toning down hotter foods. Cut this recipe in half or in a quarter for smaller family meals.

Recipe Ingredients for Simple Spanish Rice, party size quantity.

5 strips bacon or 2 tablespoons olive oil
2 cups white rice
1 bell pepper
1/2 onion, any color is fine this is for flavor
3 stalks celery
1 tablespoon garlic
1 teaspoon oregano
1 teaspoon sage
1/2 teaspoon cumin
1/2 teaspoon ground coriander
14 1/2 ounce can diced tomatoes
32 ounces chicken broth
2 tablespoons lemon juice

Recipe Directions for Simple Spanish Rice, party size quantity.

  1. Slice everything to about the same size for even cooking any style will do. Usually long slices on the bias are the way we do it, but cubes work too. Make sure to slice up the bacon so that it crumbles when cooked.

  2. Cook the bacon first to render the fat on medium high heat.

  3. Pop the rice in the bacon fat for best flavor.

  4. Add veggies and stir to soften a little first.

  5. Keep everything moving to prevent burning.

  6. Add canned tomatoes and chicken stock. For better flavor add the dried herbs now, if you have fresh herbs wait until the end for better aromatics. Cover, turn down the heat, and let simmer. At this point everything could be moved over to a slow cooker if you so desire. It will take about a half hour to an hour on the the stove top.

  7. Add lemon juice last to brighten the flavors a little. Make sure the rice is fully cooked and serve.
