Simple vegetable soup from frozen and fresh vegetables, v8 and broth. Used frozen blackeyed peas for lower sodium.

Recipe Ingredients for Simple Slow Cooker Vegetable Soup

12 oz Low Sodium V8 100% Vegetable Juice
15 oz Chicken Broth
8 oz Vegetable Gumbo Mix
9.605 oz The Silver Line Yellow
15 oz Water
2 cup(170 g) Cowpeas (Blackeyes), Immature Seeds
0.5 cup, chopped or strips Peppers, Sweet, Green
0.5 cup Frozen Onions
1 cup Spinach

Recipe Directions for Simple Slow Cooker Vegetable Soup

Saute Peppers and Onions in a bit of cooking spray and some water. Simmer/saute until soft and golden. Add to crockpot with all remaining ingredients. Cook for 4 hours on high or 8 hours on low.
