Tasty and cheap, takes about 15min to make if the rice is already cooked, and makes for GREAT leftovers! Makes six 1-cup servings. Note: you can certainly use fresh vegetables and shrimp, or substitute for your favorite protein and veggie combo. Optional: add some scrambled egg whites.

Recipe Ingredients for Simple shrimp stir fry

8 oz white mushrooms, sliced
1 tbsp vegetable oil
12 oz shrimp, frozen, pre-cooked
1 cup brown rice, raw
1 cup peas and carrots, frozen
5 oz water chestnuts, canned
1/2 medium yellow onion, diced
5 tbsp reduced sodium soy sauce
1 tsp garlic, minced

Recipe Directions for Simple shrimp stir fry

  1. Cook 1 cup of brown rice according to directions on the box (I like Uncle Ben's). For me it yielded about 3 cups once it was cooked. Put in fridge to cool for a few hours until you're ready to cook dinner. Rice that is too fresh could end up mushy. Leftover rice also works.

  2. Thaw the frozen shrimp in some cold water. Pull the tails off if present. Drain.

  3. Microwave the frozen peas and carrots to thaw them. Drain.

  4. Heat vegetable oil in a very large fry pan with raised sides (or wok, if you have one - I don't). Sautee onions on medium-high heat until they are translucent.

  5. Add mushrooms and cook until they are almost done.

  6. Add minced garlic. Be careful not to burn it. You can also add a few shakes of garlic powder to taste.

  7. Add the thawed shrimp and then the rest of the vegetables and heat through, until the mushrooms are done.

  8. Add the rice and soy sauce (1 Tbsp at a time, to taste) and heat through.
