Recipe Ingredients for simple seitan

1 cup wheat gluten flour
3 tablespoon nutritional yeast
1/2 cup vegetable broth
1/2 cup soy sauce
1 tablespoon olive oil
2 cloves garlic, pressed
8 cups cold water
3 vegetable bouillon cubes

Recipe Directions for simple seitan

  1. mix flour and yeast in large bowl.

  2. in another bowl, mix vegetable broth, 0.25 cup soy sauce, olive oil, and garlic.

  3. pour wet ingredients into dry, and stir with wooden spoon until most moisture has been absorbed and wet ingredients are partially clumped with the dry.

  4. knead mixture in hands for about 3 minutes until dough is elastic.

  5. use knife to cut dough into several pieces (i do five because it automatically evens out into 3-ounce servings). knead those pieces in your hands to stretch them out some.

  6. fill stockpot with water, bouillon cubes, and rest of soy sauce. drop in dough pieces.

  7. cover and bring to a boil.

  8. as soon as it is boiling, lower heat to the lowest it gets. partially cover pot and simmer for an hour. turn the seitan on occasion.

  9. turn off the heat and remove lid. let sit for 15 minutes.

  10. remove from broth. place in strainer until it is cool enough to handle. cut up and use as desired!
