Recipe Ingredients for Simple scones

2 cup White Flour, Unbleached
0.3 cup Sugars, Granulated
1 Teaspoon Baking Powder
0.25 teaspoon Baking Soda
1 tsp Salt, Table
8 tbsp Butter

1 large Egg, Whole
1 tsp Lemon Peel
1 tsp Ginger Root

Recipe Directions for Simple scones

  1. Preheat oven to 400 degrees

  2. In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Use cold butter and cut into chunks, cut into flour mixture (it should resemble coarse meal)

  3. In a small bowl, whisk yogurt, egg, lemon zest, and fresh ground ginger until smooth.

  4. Using a fork stir yogurt mixture into flour mixture until large dough clumps form. Then use your hands to press the dough against the bowl into a ball, (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)

  5. Place on a lightly floured surface and pat into a rectangle about 8x6 inches and 3/4in thick. Use sharp knife to cut in squares. Sprinkle with sugar of your choice or leave plain. Transfer squares to cookie sheet lined with parchment paper 1in apart and bake until golden, about 15 min. Serve warm or room temp.
