Recipe Ingredients for Simple Root Vegetable Bake

3 large potatoes
2 cloves garlic
2 large carrots
1 onion
1 cups chicken broth

Recipe Directions for Simple Root Vegetable Bake

Preheat oven to 425 degrees. Clean and peel your vegetables and garlic. Cut potatoes, onion and carrots into bite-sized pieces. Mince garlic. Combine ingredients in a medium sized baking dish reserving 1/2 cup of chicken broth. Add any herbs that you like. I enjoy a bit of thyme and sage. Bake for 45 minutes in a 425 degree pre-heated oven. Remove dish and add remaining 1/2 cup of chicken broth,stir ingredients to promote even browning, bake for an additional 20 minutes. Serves 4.
