Risotto with scallion, mushroom, and mozzarella.

Recipe Ingredients for Simple Risotto

1 cup portabella mushroom
2 medium green onion
3/4 cup mozzarella cheese
1 tbsp unsalted butter
1 tbsp onion
2 tsp garlic
1 1/4 cups Arborio rice
3 cubes bouillon
3 cups water
1 dash salt
1 dash pepper

Recipe Directions for Simple Risotto

  1. Simmer stock.

  2. Carmelized onion and garlic

  3. Add arborio until center spot appears, 1 min

  4. Add stock in a half cup at a time until absorbed, stirring like mad, 2 mins for each 1/2 cup

  5. Done with soft with chewy center

  6. Take off heat add mushrooms and scallions

  7. Add cheese
