Simple risotto with extra water instead of chicken broth (not enough broth)

Recipe Ingredients for Simple Risotto

2 tbs olive oil
1/4 cup onion, minced
1 clove garlic, minced
2 cups rice
1 cup white wine
2 cups fat free chicken broth
4 cups water
1/2 cup Parmesan cheese, shredded
2 tbs butter

Recipe Directions for Simple Risotto

  1. heat chicken broth, wine, and water; keep warm.

  2. saute onion (or shallot) and garlic in olive oil.

  3. add rice, stir constantly three minutes.

  4. add liquid 1/2 cup at a time, stirring constantly. don't add next half cup 'till current one is completely absorbed.

  5. stir constantly 17-22 minutes or until all liquid is completely absorbed and rice is al dente.

  6. remove from heat and stir in butter and cheese. serve immediately.
