Recipe Ingredients for Simple Risotto

4 T butter
1 medium onion, chopped
2 c arborio rice
6 c fat-free chicken broth

Recipe Directions for Simple Risotto

  1. Saute onion in butter until golden.

  2. Meanwhile, boil broth and reserve.

  3. Add rice for 2-3 minutes -- do not brown.

  4. Add broth, 1/2-cup at a time, adding only when liquid is absorbed. Stir almost constantly.
