My grandma would make this dish every Saturday when we'd come to visit her. My version doesn't take more than 20 minutes, however I recall her version never seemed to be done soon enough for all of us.

Recipe Ingredients for Simple Risotto (Northern Italian Style)

5 cups chicken broth (low sodium)
1 1/2 cups rice (medium grain)
1 tablespoon butter
1/4 cup chopped onion
1/3 cup white wine (or white vermouth)
1/4 teaspoon saffron

Recipe Directions for Simple Risotto (Northern Italian Style)

  1. Warm chicken broth on stove over medium heat in its own 2 quart sauce pan. For additional flavor, toss in one or two bay leaves.

  2. Melt butter in another 2 quart sauce pan, add finely chopped onions, and cook until clear.

  3. Add rice and vermouth. Let vermouth soak into rice. Using a soup ladel, add just enough broth into rice and stir. Wait until liquid has almost completely soaked in.

  4. Continue ladeling in broth, stirring, waiting until it disappears, and adding more until only about 1/4 cup remains. This method creates a creamy sauce reduction to your broth.

  5. Pulverize saffron using a small mortar and pestle, then add into 1/4 cup broth, and mix into rice.

  6. Dish is ready to serve. Best if you sprinkle parmesan cheese on top.
