Recipe Ingredients for Simple Rice Pudding

3 eggs
1/2 cup sugar
2 cups skim milk
2 cups cooked rice

Recipe Directions for Simple Rice Pudding

  1. preheat oven to 400.

  2. mix a small amount of the milk with the full amount of sugar to disolve, set aside.

  3. beat 3 eggs. Try 2 egg whites + 1 whole egg instead, for a healthier version.

  4. Combine milk and sugar mixture with the rest of the milk, then mix into the eggs. Add rice and mix again until smooth but not frothy.

  5. cook in an oiled and floured pan until golden brown on top, about 25-35min.

  6. Add a dash of nutmeg, cinnamon and alspice on top before baking if desired.
