A simple quinoa salad to keep on hand for when you need a quick, protein packed meal.

Recipe Ingredients for Simple Quinoa Salad

3 cups uncooked quinoa
1 pint grape tomatoes (quartered)
10 minced Green Olives
1 tbsp lemon juice

Recipe Directions for Simple Quinoa Salad

  1. Cook quinoa and set aside to cool in a large mixing bowl.

  2. Mince the green olives and quarter the grape tomatoes.

  3. Sprinkle the quinoa with the lemon juice, add the tomatoes and olives.

  4. Mix well.

  5. Store sealed in the fridge for up to one week
