A very simple non-dairy potato soup.

Recipe Ingredients for Simple Potato Soup

3 medium red potatoes, peeled
1 cup carrots
1/2 cup celery
2 cups chicken stock
1 tsp fresh garlic

Recipe Directions for Simple Potato Soup

  1. Peel and chop potatoes and celery.

  2. Chop carrots (I used baby carrots to reduce time).

  3. Add vegetables to chicken stock over a medium-high flame.

  4. Add garlic and other desired spices.

  5. Cook for 45-60 minutes, or until vegetables are tender.
