Risotto, made with red wine so it has a pretty pink tint! Makes ~10 1/2 C servings.

Recipe Ingredients for Simple Pink Risotto

1.5 cup Arborio Rice
4 serving Turkey Cooking Stock
4 fl oz Wine, Table, Red
0.5 medium raw Onion Red
3 tbsp Butter
1 tsp Salt, Table

Recipe Directions for Simple Pink Risotto

  1. Bring a total of 4 C low sodium broth to a boil - I added a bit of dried rosemary and thyme to the pan and let it simmer for a few minutes. Set aside, keeping it warm.

  2. Melt 2T of the butter in a large pan. Add onions and cook until softened but not browned. Add the rice and stir to coat in butter. Add the (1/2 C) wine and cook until the wine has evaporated.

  3. Add the stock 1/2 C at a time, stirring and allowing each addition to be completely cooked in before the next; the rice should be soft and fluffy but still have a bite to it!.

  4. Season with salt and pepper and stir in the last T of butter. Serve.
