vegetarian pea soup made with frozen peas

Recipe Ingredients for simple pea soup

1/2 onion, diced
1 tbsp butter, unsalted
1 tbsp flour, self raising
1 tbsp salt
1 tsp pepper, black, ground
300 ml whole milk
12 oz peas, frozen, thawed
1000 ml stock

Recipe Directions for simple pea soup

  1. Melt the butter in a pan and ad the onions. Fry the onions until soft.

  2. Add the flour and cook for a further minute.

  3. Add the stock and bring to te boil. Simmer for 5 minutes.

  4. Add the peas. Bring back to the boil and simmer until peas are tender, 5-10 mins.

  5. Blend the mixture until smooth.

  6. Put back on the heat and add milk and season to taste. Heat through but do not boil.
