Recipe Ingredients for Simple Pasta Bake

1 cup whole wheat pasta
1/2 cup canned diced tomatoes
1 oz mozzarella
2 cups fresh spinach
1 tsp olive oil
1 clove garlic, minced
1/4 onion, chopped

Recipe Directions for Simple Pasta Bake

  1. Preheat oven to 350 degrees F.

  2. Cook pasta until just slightly undercooked, almost al dente. Take one cup of the pasta and put into a small casserole dish.

  3. While pasta is cooking, in a frying pan warm 1/2 tsp of the olive oil over medium high heat. Add chopped onion and saute for a few minutes until cooked. Add the remaining 1/2 tsp of olive oil, the garlic, and spinach. Cook until the spinach is wilted completely and add entire mixture to the casserole dish.

  4. Top with tomatoes and stir together. Bake for about 10 minutes, then top with pieces of mozzarella and cook until cheese has lightly browned.
