A simple version of pad thai with lean beef.

Recipe Ingredients for Simple Pad Thai

8 oz. rice noodles
2 eggs, large
6 1/2 oz. sirloin
2/3 c. lime juice
1 1/2 c. cilantro
1/4 c. raw peanuts
2 cloves garlic
2/3 c. green onions
2 1/2 tbsp. honey
2 tbsp. fish sauce
1/4 teaspoon red pepper flakes
3 tbsp. extra virgin olive oil
4 1/2 oz. bean sprouts

Recipe Directions for Simple Pad Thai

  1. Start noodles soaking in very hot (not boiling) water. Juice limes (about 1 1/2 limes.) Cut meat into thin strips. Chop onions and cilantro and peanuts. Rinse bean sprouts.

  2. Heat oil in large frying pan or wok. Add pepper flakes, garlic, peanuts, lime juice, fish sauce, honey, and beef. Cook 5-6 minutes.

  3. Drain noodles and add to pan, cook until noodles are almost tender, then add onions, cilantro, and sprouts. Cook until noodles are done.

  4. Makes two large servings or four medium.
