This recipe combines Mark Bittman's & Jim Lahey's Modified No-Knead Bread Recipe with the "Artisan Bread in 5 Minutes" Master Recipe.

Recipe Ingredients for Simple No-Knead Bread

2 cups of hot water
4 cups all-purpose or bread flour
2 teaspoons kosher or sea salt
2 teaspoons active dry yeast
2 teaspoons red wine vinegar

Recipe Directions for Simple No-Knead Bread

  1. Mix yeast, salt, vinegar and hot water in warmed KitchenAid mixer bowl.

  2. Add flour.

  3. Attach bowl & dough hook to mixer, turn to Speed 2 and mix about 1 minute or until well blended. Dough will be shaggy and sticky.

  4. Put dough in greased bread pan. DO NOT KNEAD OR PUNCH DOWN THE DOUGH!

  5. Cover and let rise in warm place, about 70 degrees, free from draft, about 4 hours. Dough is ready when its surface is dotted with bubbles.

  6. Preheat oven to 450 degrees and heat a baking pan with water on the lowest rack for 20 minutes.

  7. Put the bread pan in oven and bake for 30 minutes or until loaf is beautifully browned.

  8. Cool on a rack for at least 2 hours before slicing.
