Simple No-Knead Bread Recipe

This recipe combines Mark Bittman's & Jim Lahey's Modified No-Knead Bread Recipe with the "Artisan Bread in 5 Minutes" Master Recipe, and some added whole wheat flour. You could let the dough rise directly in the bread pans.

Recipe Ingredients for Simple No-Knead Bread

3 cups of hot water
6 cups all-purpose or bread flour
1 cups whole wheat flour
1 tablespoon kosher or sea salt
1 tablespoon active dry yeast
1 tablespoon red wine vinegar

Recipe Directions for Simple No-Knead Bread

  1. Dissolve yeast and salt in the hot water and vinegar in warmed

  2. KitchenAid mixer bowl.

  3. Add the flour.

  4. Attach bowl & dough hook to mixer, turn to Speed 2 and mix about 1

  5. minute or until well blended.

  6. Dough will be shaggy and sticky.

  7. Put dough in large greased bowl, turning to coat.

  8. Cover and let rise in warm place, about 70 degrees, free from

  9. draft, about 4 hours.

  10. Dough is ready when its surface is dotted with bubbles.

  11. Lightly flour a work surface and place dough on it. DO NOT KNEAD OR

  12. PUNCH DOWN THE DOUGH!

  13. Using just enough flour to keep dough from sticking to your

  14. fingers, gently and quickly cut the dough in half.

  15. Sprinkle the halves with a little more flour and fold them over on

  16. themselves once or twice.

  17. Cover loosely with plastic wrap and let rest about 15 minutes.

  18. Put the halves of dough in two greased bread pans and let rise for

  19. about 2 hours.

  20. At least 20 minutes before dough is ready, heat oven to 450

  21. degrees and place a baking pan with water on the lowest rack.

  22. Put the two bread pans in oven and bake for 30 minutes or until

  23. loaf is beautifully browned.

  24. Cool on a rack for 1 hour before slicing.
