With the skins still on, new potatoes are a terrific addition to just about any meal!

Recipe Ingredients for Simple New Potatoes

4 cups new potatoes, cut in quarters
1 cup onions, cut in wedges
1 tablespoon vegetable oil
1 salt and pepper to taste

Recipe Directions for Simple New Potatoes

  1. Preheat oven to 350.

  2. Wash the potatoes before you quarter them, making sure to scrub off any mud.

  3. In a medium-size bowl, mix the onions and potatoes. Drizzle with oil and stir lightly to coat.

  4. Place into an ovenproof dish and bake 30 - 40 minutes until lightly browned.

  5. Serve with baked chicken breast or baked salmon - or add a cup of fresh green peas, sprinkle with balsamic vinegar and serve with cold meats and salad.
