Basic, light, creamy, filling mushroom soup. No frills, no tricks. just simmer it until you like it, then strain it to get the good texture.

Recipe Ingredients for Simple Mushroom Soup

1 small onion, chopped
3 cloves of garlic, minced
1 teaspoon olive oil
4 cups mushroom stems, chopped
1 cup cream
1 quart chicken stock
1 salt and pepper

Recipe Directions for Simple Mushroom Soup

  1. sautee onion and garlic in oil until tender

  2. add mushrooms and sautee until moisture is mostly cooked out

  3. add cream, simmer until it's partially reduced.

  4. add half the stock and reduce

  5. add last bit of stock, puree, strain, season.
