Great recipe for leftover sandwiches! For a change, substitute the lean ground beef with ground turkey or chicken. The TVP is added for additional protein and fiber; you can leave it out if you want to. To Freeze: Wrap meatloaf in plastic wrap and aluminum foil, and freeze up to 1 month. Thaw in refrigerator overnight.

Recipe Ingredients for Simple Meatloaf

1 1/2 pounds lean ground beef
1/4 cup TVP
3/4 cup oatmeal
3/4 cup skim milk
1/4 cup chopped onion
1 large egg, slightly beaten
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon yellow mustard

Recipe Directions for Simple Meatloaf

  1. Combine first 8 ingredients in a large bowl just until blended; place in a 9 x 5 inch loaf pan.

  2. Stir together ketchup, brown sugar, and yellow mustar; pour evenly over meatloaf.

  3. Bake at 350 degrees for 1 hour. Remove from oven; let stand 5 minutes, and remove from pan before slicing.
