roast the red peppers in the oil, then use the run-off to fry the garlic. use either fennel or celery. add some spices, e.g. cumin

1/2 c lentils
3 carrots
1 onion
2 Celery stalks
2 red peppers
1 clove garlic
1 tbsp olive oil

Recipe Directions for Simple Lentil Soup with Red Peppers

  1. boil the lentils in 1/2 c water and simmer for 30 mins.

  2. add the veggies and another 1/2 c , or so, water. simmer for 30 mins

  3. let cool completely & blend lightly
