Recipe Ingredients for Simple Lemon Chicken

3 tablespoons olive oil
1 1/4 lbs chicken cutlets
1/8 c flour for dredging
3 T lemon juice
1 cup chicken broth

Recipe Directions for Simple Lemon Chicken

  1. Heat butter and olive oil in large regular skillet (not non-stick) over medium high heat until

  2. butter is foamy. Do not burn the butter.

  3. While heating, mix flour, salt and pepper on a dish and dredge chicken cutlets. Add to

  4. skillet and cook for 6-8 minutes without touching. Turn and cook on the other side 4-6

  5. minutes until done. Remove from pan and place in a 200 degree oven to keep warm.

  6. Return pan to heat and add lemon juice and chicken broth and cook over medium high

  7. heat, scraping the bits from the pan. Cook about 5-8 minutes, whisking constantly until

  8. reduced and slightly thickened.

  9. Remove chicken from oven and put on plate. Pour sauce on top.
