Much lightened version of the original 191 calorie lemon bars.

Recipe Ingredients for Simple Lemon Bars

1 cup (2 sticks) Light Butter, softened
1/2 cup Splenda
1/8 teaspoon salt
2 cups all-purpose flour
1 cups Splenda
1/4 cup all-purpose flour
1 cup Egg Beaters
6 tablespoons fresh lemon juice
2 tablespoons Splenda

Recipe Directions for Simple Lemon Bars

  1. Heat oven to 350 degrees F.

  2. Line a 13 x 9 x 2-inch baking pan with nonstick foil.

  3. Crust: In a large bowl, light butter, Splenda and salt until well combined and smooth.

  4. Stir in 2 cups flour until blended.

  5. Scrape into the prepared baking pan and press evenly into the bottom.

  6. Bake at 350 degrees F for 20 minutes or until crust is golden brown. Remove from oven and set aside.

  7. Filling: In a large bowl, beat Splenda, 1/4 cup flour, Egg Beaters and lemon juice until completely smooth.

  8. Pour over crust.

  9. Bake at 350 degrees F for 25 minutes or until no imprint remains in the filling when lightly touched in the center.

  10. Remove from oven to a wire rack and cool completely.

  11. Dust lightly with confectioners sugar (optional).

  12. Cut into 24 bars and serve.
