simplified version of lasagna using pureed spinach instead of meat and spaghetti sauce from the jar (preferrably classico with mushrooms and ripe olives for added nutrition).

Recipe Ingredients for Simple Lasgna

3 cups mozzarella, part skim milk, low moisture cheese
4 cups spinach, pureed
2 cups cottage cheese, non fat
1 egg
1/2 cup sour cream, non fat
1 1/2 cups pasta sauce
1 tsp garlic
1 tsp oregano
1 tsp basil
2 1/2 oz macaroni, enriched

Recipe Directions for Simple Lasgna

  1. in a blender, blend sour cream with spinach, little by little until liquified add garlic, oregano and basil to spinach mix

  2. mix egg into cottage cheese

  3. boil lasagna al dente

  4. spray baking pan with non stick spray

  5. layer noodles, spaghetti sauce, spinach mix, cottage cheese&egg mix, and mozzarella in any order (recommend noodles NOT be on top)
