This recipe is really good for those mornings when I feel like having a homemade breakfast without lots of cooking.

Recipe Ingredients for Simple healthy egg white muffin w/ cheese

1 muffin English Muffin, Light Multi Grain
1 large Egg, White
7 grams Cheese

Recipe Directions for Simple healthy egg white muffin w/ cheese

  1. Preheat a 10" skillet to a Medium - Low heat

  2. Separate egg whites into a small bowl, discard yolks. Scramble with a fork and fry in the skillet with as little butter or oil as possible.

  3. Slice the muffin in half and put in the toaster.

  4. If using low enough heat you should just have enough time to slice the cheese while both of the other two ingredients are cooking.

  5. Assemble on a plate, or paper towel if you need to eat on the run (which is what this recipe was developed for). Fold the egg over twice to make it fit in the muffin. Enjoy.
