Simple Egg Fried Rice Recipe

This very simple dish can be cooked up in approx 30 min and is a perfect fast breakfast meal, but also is good cold for a quick lunch.

Recipe Ingredients for Simple Egg Fried Rice

1 cups Jasmine Rice
2 eggs
1/4 cup spinach
2 green onions

Recipe Directions for Simple Egg Fried Rice

  1. Set rice to cook as normal (i use a rice maker so its a simple as measuring out the rice adding the water and turning the machine on)

  2. Turn on your stove and place eather a non stick pan or wok on top of the burner to pre-heat your pan or wok.

  3. While rice cooks and the pan heats up mince green onions and chop up the spinach.

  4. Next beat 2 eggs in a bowl and mix in the green onions and spinach with the eggs

  5. Once the rice is ready immediately remove the rice from the heat and transfer it to another decent sized bowl.

  6. Pour the egg mixture over the rice mixing it in so that the rice is evenly coated with the egg mixture.

  7. Then spray your pan or wok with cooking spray and pour the egg rice mixture into the pan using a spatula to shift the rice mixture around the pan so that the egg is cooked evenly yet rapidly.

  8. Once the egg congeals and looks cooked remove from heat and serve on plates or in rice bowls.
