A nice low cal side to any oriental-style dish! Add fresh grated ginger if you are feeling under the weather. You can add spinach leaves, scallions, leeks, or grated carrot to add vitamins and even make it a main dish! Remember to add it to your food log if you add anything!

Recipe Ingredients for Simple Egg Flower Soup

4 cups low sodium chicken broth or stock
2 eggs, lightly beaten
1 green onion, minced
1/4 teaspoon white pepper

Recipe Directions for Simple Egg Flower Soup

  1. In a wok or saucepan, bring the 4 cups of chicken broth to a boil. Add the white pepper and any veggies if you choose to add them. Cook for about another minute.

  2. Very slowly pour in the eggs in a steady stream. To make shreds, stir the egg rapidly in a clockwise direction for one minute. To make thin streams or ribbons, gently stir the eggs in a clockwise direction until they form.

  3. Garnish with green onion and serve.
