Chicken with Potatoes and Asparagus

Recipe Ingredients for Simple and Delicious Chicken with Potatoes and Asparagus

3 tbsp of extra virgin olive oil
24 oz boneless skinless chicken breast halves
1 tbsp thyme
2 tbsp unsalted butter
6 medium red potatoes, cut in half and thinly sliced
1 medium yellow onion, thinly sliced
1 tbsp of Dijiom mustard
1 1/2 cups of chicken stock or broth
1 pound of asparagus,trimmed and cut into 2-inch pieces
1/2 cup fresh parsley

Recipe Directions for Simple and Delicious Chicken with Potatoes and Asparagus

  1. Preheat a large nonstick skillet over medium-high heat with 2 tbsp of EVOO

  2. Season the chicken liberally with half of the thyme and salt and pepper,then add to the hot skillet.

  3. Cook the chicken for 5 to 6 min on each sideuntil cooked through.

  4. Remove the chicken to a plate and cover it with foil to keep warm.

  5. Return to skillet to the burner over medium high heatadd remaining tbsp of EVOO and the 2 TBSP of butter.

  6. Add the sliced potates,the remaining thyme,salt,and pepper and cook until lightly browned, about 5 min. Add the sliced onions and continue to cook for 3 min, stirring occasionally.

  7. Add Mustard and Chicken broth and bring to bubble, then add asparagus and coutinon to cook for 4 to 5 min, until the asparagus and potatoes are both tender. add the parsley and stir to combine. Serve the chicken breast whole or sliced, on top of the potatoes and asparagus.
