Good source of fiber that makes a great side dish for chicken.

Recipe Ingredients for Simple Crock Pot Black Beans

1 pound dry black beans
6 cups chicken broth
2 cloves garlic
1 onion
1 tsp cayenne pepper
3/4 tsp ground black pepper
2 tsp salt

Recipe Directions for Simple Crock Pot Black Beans

  1. Cover beans with water overnight.

  2. Chop garlic and onion and saute until almost translucent (1/2 way cooked)

  3. Add beans, onion & garlic, and the rest of ingredients to crock pot.

  4. Cook on High for 4 hours. Reduce heat to Low, and continue cooking for 2 hours, or until you are ready to eat.

  5. Note: Some people don't use salt until after the beans are cooked fearing they will remain hard. I have found that the hardness relates to age of bean and not the added salt, but to each his own.
