Recipe Ingredients for Simple Creme Brule

2 egg yolks
1/6 cup sugar
1/2 tsp vanilla extract
1 pinch of salt
2/3 cup whole milk
2 tbsp brown sugar

Recipe Directions for Simple Creme Brule

  1. Preheat oven to 300 degrees (F) and heat up some water to use for water bath.

  2. Heat up milk to a simmer and stir in vanilla extract. Make sure mixture does not come to a boil.

  3. Beat egg yolks and salt over a double boiler while slowly adding sugar until mixture is light in color.

  4. Slowly add milk and vanilla mixture to egg yolks while whisking briskly over double boiler. Continue to whisk for at least 5 minutes or until mixture coats the back of a spoon.

  5. Strain mixture and then pour into ramikans. Place ramikans in water bath and then into 300 degree (F) oven and cook for 30 - 35 minutes or until center of the custard is set.

  6. Keep refrigerated until ready to serve. When ready to serve, sprinkle brown sugar over the top and caramelize using torch or oven broiler.
