500 grams Beef, Top Sirloin
200 grams Parsnips
300 grams Carrots
200 grams Onions
500 grams Chick Peas
4 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
4 tbsp Cumin Seed
500 grams Water

Recipe Directions for Simple Couscous with Beef

  1. brown meat with cumin in large pot

  2. add water

  3. boil 15 minutes

  4. add chick peas to pot and stir

  5. boil 15 minutes

  6. peel onions, carrots, and parsnips

  7. quarter onions

  8. cut carrots and parsnips in 1" slices

  9. add carrots, onions, and parsnips to pot and stir

  10. boil 15 minutes, stir

  11. add peppers and tomatos. do not stir

  12. boil 10 minutes
