Simple chicken rice dish I made while bored! You can add whatever vegetables you want and how much. Plus you can shortcut this. I personally used boullion and a 13oz can of chicken breast!

Recipe Ingredients for Simple chicken and Rice

1 cup rice
1 cup chicken broth or stock
1 1/2 cup water
1 chicken breast, cooked
1 tsp ground black pepper
1 green onion
1 large carrot
1 tsp dried herbs

Recipe Directions for Simple chicken and Rice

  1. If you use canned, omit a half cup of water as it contains about that much in the can and it is pretty flavorful. Also, if follow the recipe and use the chicken breast you will have to flavor your water a bit more as the broth from the can is not there.

  2. Boil the water and stock/broth. Add your diced onions, pepper, herbs and carrots. Then add your rice, cover and simmer till it absorbs the water. Add in your chicken and give it a good stir. Season to taste and enjoy!

  3. Feel free to add more water or stock to make it more of a soup. It will absorb most the water so it's up to you!
